Organic Olive Oil in Andalusia

One of the most sought-after experiences in Andalusia is olive oil. With over 20 years of guiding experience, I have visited countless oil mills, from the ancient stone mills of the past to the most modern facilities of today, offering perfect traceability from harvest to your spoon.

Did you know that Spain is the world's leading producer of olives and olive oil? Andalusia alone accounts for around 70% of Spain's total production, with the province of Jaen contributing 80% of Andalusia's production from over 5,000 oil mills. The scale of production is truly impressive.

As we travel around Andalusia, guests are often amazed by the "pointillism" of the perfectly aligned olive trees that seem to stretch on forever. Even those familiar with the industry, like a recent guest from California whose company controls the largest production in the state, are surprised by the sheer size of the plantations and the fact that they are mainly dry-land culture.

With over 300 varieties of olives across Spain, our region boasts around 30 varieties, some of which are limited to specific areas. For example, the Nevadillo variety is only found in the surrounding areas of Frigiliana.

Did you know that the color of olive oil is not an indication of its quality? The color varies depending on the variety of olives used, ranging from light yellow to dark green. The flavors, however, are what sets them apart.

We offer both half-day and full-day tours to organic oil mills, where the trees are grown organically and the oils are certified. These companies exclusively use their own harvest for production and commercialization. My personal favorites are located in the surroundings of Ronda and the Mountains of Malaga.
